The Good Chili Lettuce wraps with spicy peanut sauceBy Chef Starr Cornwall

Ground turkey or any ground meat, tofu, or ground meat alternative,lots of fresh cilantro, ice berg lettuce leaves…

Marinate the Meat:

  • 1 pound ground meat
  • 2 tablespoons chilifi
  • 2 cloves minced garlic ( I like to use a garlic press for this)
  • 2 tablespoons smoky coconut amino‘s (you can find at Trader Joe’s)
  • 1 tablespoon fish sauce (my favorite is red boat)
  • Pinch of salt
  • 1/ 2 cup chop cilantro

Set aside now we’re going to make the peanut sauce:

  • 3 tablespoons peanut butter
  • 1 tablespoon chilifi the good chili
  • 1/4 of a cup avocado oil
  • 2 teaspoon fish sauce
  • 1 tablespoon red curry paste
  • 3 cloves minced garlic
  • Lime zest from 1 lime
  • 2 tablespoons rice wine vinegar
  • 1/2 cup coconut amino‘s or 1/4 of a cup soy sauce
  • 1/3 cup of coconut milk full fat if your sauce is too thick add more coconut milk

stir until everything is incorporated into a creamy delicious sauce

Cut your head of iceberg lettuce in half and rinse under cold water and set aside to drain in a colander on a plate in your refrigerator this will chill the lettuce so it’s nice and crunchy Cook your ground meat on medium to high heat coat your pan with avocado oil or coconut oil to begin with then add the meat when you see the oil smoke sauté until fully cooked and browned with little crispy bits… at the very end add all your fresh cilantro stir Now you are ready to eat! Put your delicious chilified meat in a bowl on a plate surrounded with your lettuce cups and your peanut sauce in another bowl on the side A delicious refreshing dinner or lunch that anyone can enjoy whether you’re a carnivore, vegan, gluten-free or Paleo And if you want to make it keto just omit the coconut sugar
